Cooking the pasta

  1. Heat olive oil in a large pot over medium heat. Add diced onion, garlic, and ginger, and sauté until fragrant and softened, about 5 minutes. 

Making the Cheese Sauce

  1. Add the diced potatoes to the pot and stir to coat in the aromatics. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15-20 minutes, or until the potatoes are tender.
