In a large pot, cook your pasta according to the package instructions. Drain and set aside.
In a large skillet over medium heat, heat the olive oil. Add the sliced sausage and cook until browned on both sides, about 5-7 minutes. Remove sausage and set aside.
In the same skillet, add the diced onion, garlic, and bell pepper. Sauté for about 3-4 minutes until the onions are soft and translucent.
Add in water, then stir in the gochujang, Cajun seasoning, and smoked paprika, allowing the spices to coat the vegetables. Cook for another 1-2 minutes until fragrant.
