  1. Prepare the Potatoes
    • Preheat oven to 375 degrees.
    • Thinly slice potatoes into even rounds using a mandolin slicer or knife. Set aside in a bowl of ice-cold water to prevent browning. 
    Allow to sit in water for at least 15 min to get rid of excess starch

Make the Garlic Cream Sauce

    • In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.  
    • Whisk in the flour and cook for 1-2 minutes to form a roux. Slowly whisk in the heavy cream and milk, ensuring no lumps form. Bring to a simmer.  
    • Once the milk mixture is simmering, stir in the Parmesan cheese, thyme, salt, pepper, paprika, onion powder, and garlic powder. Allow to simmer for another 2-3 minutes until it slightly thickens. Then remove from heat. 
  1. Layer the Dish
    • Grease a baking dish with butter or non stick spray. 
    • Drain the potatoes and pat them dry with a paper towel. 
    • Layer the potatoes evenly in the dish. Pour the cream sauce over the potatoes. Sprinkle shredded mozzarella and cheddar cheese over the top.

    • Cover the dish with foil and bake in the oven for 40 minutes. 
    • Remove the foil and bake for an additional 20-25 minutes until the top is golden and crispy and the potatoes are tender.
