Description

This delicious fusion sandwich brings together tangy, spicy kimchi, crispy bacon, and gooey melted cheese for a flavor-packed experience in every bite.

Ingredients
  • 8 slices of thick-cut bacon
  • 1/2 cup kimchi, drained and chopped
  • 1 tbsp butter, softened
  • 4 slices of sourdough or brioche bread
  • 4 slices of sharp cheddar cheese
  • 2 slices of mozzarella or provolone cheese
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 1 tsp honey or sugar (optional, to balance kimchi’s tang)
  • 1 tbsp mayonnaise (optional)
Instructions
  1. In a skillet, cook the bacon over medium heat until crispy. Remove and place on paper towels to drain. Set aside. Use paper towels to remove excess bacon grease from the pan. 

    make sure to leave a little bacon grease in the pan to cook the kimchi in.
  2. In the same skillet (with some bacon fat left), add sesame oil, chopped kimchi, soy sauce, and honey. Sauté for 2-3 minutes until the kimchi is slightly caramelized and fragrant. Remove from heat.

  3. Assemble the Sandwich
    • Butter one side of each bread slice.
    • On the unbuttered side, place 1 slice of cheddar cheese.
    • Add crispy bacon slices and sautéed kimchi on top.
    • Add 1 slice of mozzarella or provolone cheese, then top with another slice of cheddar.
    • Cover with the second slice of bread, butter side facing out.
