Cook the Bacon and Aromatics
Cut up the bacon into small pieces. In a large skillet over medium heat, cook the diced bacon until crispy and golden brown. Remove and set aside, leaving about 1 tablespoon of rendered fat in the pan. Add minced garlic and chili flakes to the pan, sautéing until fragrant (about 30 seconds). Stir in the white parts of the green onions and cook for another 30 seconds.
4 Combine Noodles and Sauce
Reduce the heat to low. Add the cooked noodles to the skillet, tossing to coat them in the garlic-bacon fat mixture. Slowly pour in the miso carbonara sauce, stirring continuously to avoid scrambling the eggs. Add reserved noodle water a little at a time to create a creamy, glossy sauce.
5 Finish and Serve
Stir in the crispy bacon and mix well. Divide the noodles into bowls and garnish with green onion tops, extra Parmesan cheese, nori strips, and a soft-boiled egg if desired. Sprinkle black sesame seeds for an extra touch.

Note
- Control the heat: When adding the sauce to the noodles, make sure the skillet is on low heat to prevent the eggs from curdling.
- Reserve noodle water: This starchy liquid helps create that signature creamy sauce texture.
- Avoid overcooking the noodles: Slightly undercook the noodles when boiling since they will continue to cook when tossed in the sauce, ensuring they stay al dente.
- Experiment with proteins: While bacon adds a smoky richness, you can substitute it with diced tofu, chicken, or even shrimp for different flavor profiles and dietary preferences.
- Save extra sauce: The sauce can be refrigerated for up to two days if you want to make it ahead of time. Just warm it gently before combining it with fresh noodles.
