This Spicy Miso Ramen Carbonara brings together the creamy richness of Italian carbonara and the bold, umami-packed flavors of Japanese miso ramen.
In a medium bowl, whisk together the egg yolks, miso paste, gochujang, Parmesan cheese, cream, soy sauce, and sesame oil until smooth. Set aside.
Bring a pot of water to a boil and cook the ramen noodles until slightly chewy for about 3 minutes. Reserve 1/2 cup of the noodle cooking water before draining.
Cut up the bacon into small pieces. In a large skillet over medium heat, cook the diced bacon until crispy and golden brown. Remove and set aside, leaving about 1 tablespoon of rendered fat in the pan. Add minced garlic and chili flakes to the pan, sautéing until fragrant (about 30 seconds). Stir in the white parts of the green onions and cook for another 30 seconds.
Reduce the heat to low. Add the cooked noodles to the skillet, tossing to coat them in the garlic-bacon fat mixture. Slowly pour in the miso carbonara sauce, stirring continuously to avoid scrambling the eggs. Add reserved noodle water a little at a time to create a creamy, glossy sauce.
Stir in the crispy bacon and mix well. Divide the noodles into bowls and garnish with green onion tops, extra Parmesan cheese, nori strips, and a soft-boiled egg if desired. Sprinkle black sesame seeds for an extra touch.
